Mystes Maratheftiko

Classical red Vinification with 24 hour cool maceration in whole grape berry. Begin alcoholic fermentation spontaneously and continuously inoculated with selected yeast. Extraction of colour and tannins with short recycling and pigeage. The marc are separated according to the phenolic potential. Both fermentation and malolactic are completed in the tank and the wine is transported in French oak barrels for 12 months.
